Long run & a recipe

Hey Friends!

I’m taking a break from unpacking boxes to write up a run report & share a delicious recipe for spaghetti squash & meat sauce!

This morning I slept in (to late), enjoyed some coffee & banana then went out for a long run. It’s still way to hot in Florida to be going out for a long run at 8:30. It felt kind of cool, but the sun was blazing down on me so that made it a little uncomfortable. The other problem was that I had cookies & queso for dinner on Saturday night at a football party. Uhm, fail.

So needless to say, my 8 mile run was quite a struggle, but I still managed to eek out a 8:24 avg, which I am super happy with, but DANG, it was HARD!

Spaghetti Squash & meat sauce

Ingredients:
1 medium spaghetti squash
spaghetti sauce (jar or home made, whichever you prefer)
diced tomatoes
1lb ground turkey
basil (I used mrs. dash italian seasoning)
olive oil
minced garlic
1/2 med onion

  1. Preheat oven to 400 degrees F. Using a sharp knife, cut the squash in half lengthwise. Scoop out the seeds and discard. 2015-11-29 17.40.37
  2. Place the halves with the cut side up on a rimmed baking sheet. Drizzle with olive oil and season with salt, pepper, and oregano. Roast the squash in the oven for 40-45 minutes, until you can poke the squash easily with a fork. Let it cool until you can handle it safely. Then scrape the insides with a fork to shred the squash into strands.

  3. While the spaghetti squash is roasting, melt coconut oil in a large skillet over medium heat. Add chopped onion and garlic and cook for 4-5 minutes. Add ground turkey and brown the meat, stirring occasionally. Season with salt and pepper. Add the chopped tomato, tomato sauce, and Italian seasoning and stir to combine. Simmer on low heat, stirring occasionally, while the spaghetti squash finishes roasting.

5. When squash is done roasting, let it cool for a few minutes, or use a towel/kitchen mitt to hold squash and scrap out insides. It should be stringy like spaghetti noodles.

6. Serve with meat sauce

Spaghetti squash are super ridiculous to cut- Here is how I do it..

Place a little bit of water in the bottom of a baking dish, place whole spaghetti squash in, stick it in the microwave for 5-6 min. Let it cool for a minutes so it’s easier to handle. Grab it with a towel and gently cut in half – it should be soft enough to cut.

Have you had spaghetti squash before? We tried it a few years ago and I must not have cooked it all the way because it was crunchy and not good. The last few times I’ve made it, it’s been really good and it’s one of our favorite new things to make!
